180 g sugar (3/4 cup).

1/2 teaspoon salt.
Heat until the sugar melts.
60 ml milk (1/4 cup).
1 tablespoon cornstarch.
Mix well.
Cook over medium-high heat, stirring constantly, until boiling.
Leave to cool at room temperature.
250 g butter at room temperature.
Beat until fluffy (3-4 minutes).
Mix gently.
3 eggs.
3 spoons of sugar.
3 egg whites.
100 grams of sugar (3.5 ounces).
juice of 1/2 lemon.
Beat the egg whites until you get this texture, 4-5 minutes.
170 g flour (1 cup + 2 tablespoons).
1 tablespoon cornstarch.
1 teaspoon baking powder.
Mix gently.
18 cm (7 inch) mold lined with parchment paper.
Bake at 180 C (356 F) for 30 minutes.
Allow to cool thoroughly before slicing the cake.
