Delicious Sicilian arancini with a crunchy crust and a fabulous and delicious filling 😋
Good morning friends, I hope you are well! Today I propose a traditional Sicilian recipe: rice balls with meat sauce and peas, one of the most famous Sicilian recipes in the world and I would say even more delicious.
‼️Tips ‼️
✅️ use half Rome rice and half Original or Carnaroli
✅️ let the rice cool completely before forming the arancini
✅️ taste the rice well so it will be more delicious even where there is no filling
✅️ use a provola instead of mozzarella because it makes too much water and risks opening the arancino
✅️ fry with half extra virgin olive oil and half seeds for a more delicious flavor
✅️ if you want to freeze arancini, frozen raw after breading them

1 kg rice (half Roma and half Originario)
2 sachets of saffron
2,200 g water
salt
extra virgin olive oil
800 g tomato
celery, carrot, onion
black pepper
120 g parmesan
80g butter
150 g provolone
500 g minced beef or half pork and half beef
rosemary
500g peas
breadcrumbs as needed
2 eggs
2 glasses of water
2 glasses of flour
